Every airline caps pets per flight, some at two, and the “72 hours before departure” on their website is a deadline, not a plan. If the pet spots are gone you don't fly with your dog, and the airline usually won't refund you. Add the dog the same day, then confirm it's on the booking in writing.

Snub-nosed breeds can fly in the cabin. The ban is on the hold. Iberia bars brachycephalic breeds from the hold and allows them in the cabin if they meet the cabin conditions. That is the same split Aegean and KLM use, and the reason is the same, the hold is the risk. Separately, Spain's own list of potentially dangerous breeds is excluded from the cabin, and those dogs must be muzzled at security. The policy covers Iberia, Iberia Express and Air Nostrum, and Air Nostrum allows a larger carrier at 65 x 83 x 56.
Refused in the cabin: Spanish potentially dangerous breeds, as defined in Spanish law.
Fine in the cabin, refused in the hold: Bulldog, Pug, Boxer, and other brachycephalic breeds.

One stop, if the direct flight doesn't suit

Every airline below takes a dog in the cabin on that leg, and each leg has been checked against the same country rules as a direct flight. Two legs means two check-ins and a dog who has to cope with the change, so it’s the fallback, not the first choice. If you leave the airside area at the stop, that country’s entry rules apply to your dog too.
